A Healthy Indian-Inspired Dessert for Kids

Packed with the natural sweetness of dates and carrots, plus the richness of roasted nuts and a hint of cardamom, this recipe is perfect for kids' school lunchboxes or after-school snacks.

🌿 Ingredients (Makes approx-6 medium sized balls)

100g (¾ cup) grated carrots

1 tsp ghee

½ tsp cardamom powder

100g (6 large) soft dates, pitted

25g (2.5 tbsp) roasted almonds

25g (2.5 tbsp) roasted cashew nuts

Desiccated coconut [Slightly roasted for nutty flavour], for coating
🍳 Method

Cook the carrots
In a small pan, heat 1 tsp of ghee and sauté the grated carrots on medium heat until soft. Stir in the cardamom powder and mix well. Set aside to cool completely. -
Blend everything together
In a food processor, combine the cooked carrots, soft dates, roasted almonds, and cashews. Blend until the mixture forms a sticky, dough-like texture. -
Chill and roll
Refrigerate the dough for 30 minutes to help it firm up. Then, scoop and roll into equal-sized balls using your hands. -
Coat in coconut
Roll each ball in desiccated coconut for a delicious finish. Set in the fridge until firm.
