Healthy Tiffin Recipe for Kids: Zucchini Corn Fritters They'll Actually Eat
Because some mornings feel like a MasterChef challenge—with only 10 minutes on the clock.
We’ve all been there: standing in the kitchen, one eye on the clock, one hand on the tiffin, and a kid yelling they don’t want roti today. These Zucchini Corn Fritters are my go-to when I want something quick, healthy, and actually eaten (not returned smushed in the bag).
They're crispy outside, soft inside, pack in veggies, and yep—fit perfectly into our Bento lunchboxes. Even better? You can freeze a batch and just reheat for busy mornings. No soggy mess. No complaints.

👩🏽🍳 Ingredients (Makes ~18 mini fritters)
- 2 medium zucchinis, grated and squeezed to remove water
- 1 sweet corn cob, kernels removed
- 1 small block of Haloumi diced
- 1/4 red onion or 1 bunch spring onions, finely diced
- 2 tbs chopped coriander
- 2 tsp cumin powder (optional but gives it a fun twist!)
- 1 tsp chilli powder
- 2 eggs
- ½ cup plain flour or wholemeal flour (I used plain flour)
- ½ cup chickpea flour or besan flour (I used chickpea flour)
- 1/4 cup milk (boiled and cooled down)
- Salt & pepper to taste
- Ghee/Olive oil for shallow frying
🥄 Method: From bowl to box in 15 minutes
- Grate & squeeze: Start by grating zucchini and squeezing out as much water as possible using a clean cloth or tea towel. (Trust me—this step is key to avoid soggy fritters.)
- Mix it up: In a bowl, combine grated zucchini, corn, onion, coriander, cumin, chilli powder, eggs, flour, Haloumi, milk, salt and pepper. Mix until you get a thick batter. I added grated carrots as well for added veggies😊
- Fry: Heat a cast-iron pan over medium heat and add a drizzle of ghee/olive oil. Use a spoon or small ice cream scoop to drop batter into the pan.
- Cook: Fry for 3–4 mins on one side (until golden), flip, and cook the other side for 2–3 mins. Drain on paper towel.
- Cool & pack: Let cool before packing into your Baboons Bento lunchbox.
💡 Packing Tip: Make it a full meal
Add 1 poached egg or a side of yoghurt for protein + some fruit slices = balanced school lunch, done.
🧊 Can I freeze these fritters?
Yes! Once cool, freeze in an airtight container with layers of baking paper in between. Reheat in an oven or pan to get the crisp back.
🧒 Fussy eater trick?
Cut into fun shapes with cookie cutters. My kid thinks anything star-shaped “tastes better”—and I’m not correcting that.
🥦 Variations & swaps:
- No zucchini? Grated carrot or beetroot works too
- Skip the cumin for a more neutral flavour
- Add haloumi or paneer bits for extra yum
